CHOCOLATE FILLED HOLIDAY COOKIES
Merry Christmas from Endangered Species Chocolate! We’re celebrating with these Chocolate Filled Holiday Cookies. Made with almond flour and oozing with creamy vegan chocolate, these scrumptious and stunning treats really get us into the holiday spirit.
The simplicity of the chocolate filling allows the 55% Oat Milk Chocolate to shine. Vegan, gluten free and Fairtrade chocolate chips give you none of the guilt and all of the deliciousness.
Two perfectly dense almond flour cookies sandwich the chocolate filling creating a drool-worthy bite.
Dust the cookies with powdered sugar and let the Christmas Tree shape wow anyone you make these cookies for. Or simply ration these Chocolate Filled Holiday Cookies for yourself in the days leading up to Christmas!

- 2 cups almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 2 tsp baking powder
- 1 tsp vanilla
- dash of salt
Chocolate Filling Ingredient
- 1/3 cup melted @eschocolate baking chips
- 1/3 cup coconut cream
First start by creating the cookies. Combine all of the ingredients in a bowl and mix them well until they form a dough.
Wrap the dough in plastic wrap and refrigerate it for 10-15 minutes so it can harden and be less sticky.
After taking out the dough, use a rolling pin to roll it out to be about 2 millimeters thick.
I used a cup to cut out the cookie shape and a mini tree cutout for the middle. Only cut out trees into half of the cookies as only the top cookies will need the hole in the middle.
Next, line the cookies on a baking tray and bake them for 6-7 minutes at 350*F/ 175*C. Give them plenty of time to cool off after taking them out of the oven so they can harden.
Optional: sprinkle powdered sugar on top of the cookies.
While the cookies are baking and cooling, melt 1/3 cup of chocolate chips and add it to a bowl (measure the chocolate when it has already been melted).
Then add 1/3 cup of coconut cream to the bowl and mix the chocolate and coconut cream well.
Finally, once the cookies have hardened, spread chocolate on each cookie bottom and top it with the tops of the cookies.
